theYoungerMrsWarde Posted March 12, 2012 Share Posted March 12, 2012 2 1/4 C flour 1 t salt 1 1/4 t backing soda 1 1/2 t baking powder 3 ripe bananas-mashed (I squeeze and mush it inside the peel) 3 large eggs 1 2/3 C sugar (granulated white) 2/3 C vegetable oil 2/3 C buttermilk (soured milk works as a substitute) Mix to remove lumps-but don't overbear. Pour into 2 greased & floured bread pans OR 1 9x12 in. Bake at 350* for 45 minutes or until toothpick comes out clean. WistfulRidge Posted March 12, 2012 Share Posted March 12, 2012 As a general rule I hate banana bread, but I love this recipe. Seriously, I can eat the entire loaf in a single sitting. It is dangerous. I cut the sugar back to 3/4 cup and it still comes out great. Seriously. :D (cut & paste from a previous post) It lists nuts as optional but I never put them in as ds loves banana bread but not with the nuts. This one's my favorite--it's moist and dense. (From Williams-Sonoma) 2.5 cups whole-wheat flour 2 tsp baking soda 1 tsp salt 1 cup unsalted butter, room temp 2 cups sugar 2 cups mashed ripe banana (4 large bananas) 4 eggs 1 cup chopped walnuts or pecans (optional) Preheat oven to 350F. Grease and flour 2 med (8.5") loaf pans. In med bowl stir together flour, baking soda, salt. In large bowl beat butter and sugar until blended. Beat in banana, then beat in eggs until completely mixed (mixture may looked curdled--that's ok). Stir in nuts. Add combined dry ingredients and stir just until blended. Spread evenly into 2 pans. Pour into a greased loaf pan (or two smaller ones) and bake at 325 F for 1 hour for the larger pan, or 50 min. for the smaller ones (my small pans are 4" x 8". They are not mini loaf pans). (Well, I do sort of make it, what with mashing up the bananas, mixing everything up in a bowl, dumping it into the pan, and baking it in the oven... and I do it when I'm at home, so that counts, right? ;)) It's sort of homemade-ish. Banana Bread 3 or 4 ripe bananas, mashed 1/3 cup melted butter 3/4 cup sugar 1 egg, beaten 1 tsp vanilla 1 tsp baking soda pinch of salt 1 1/2 cups all purpose flour Heat oven to 350 F / 175 C With a wooden spoon, mix butter into mashed bananas in a large mixing bowl. Mix in sugar, egg, and vanilla. Sprinkle baking soda and salt over mixture and mix in. Add the flour. Mix. Pour into a buttered 4 x 8 pan and bake for 1 hour. Cool on a rack. Great Harvest Banana Bread I haven't made it from this recipe yet, but I did eat the banana bread from the store, and it is by far the best banana bread I have ever eaten. Parrothead Posted March 12, 2012 Share Posted March 12, 2012 This one, just don't add nuts: King Arthur Banana Bread 2 large eggs 1 cup sugar 1/3 cup vegetable oil 1 cup banana, mashed (2 to 3 very ripe) 2 teaspoons vanilla extract 1 teaspoon baking soda 1 teaspoon baking powder 1 teaspoon salt 1 teaspoon cinnamon 1/2 teaspoon nutmeg 2 2/3 cups flour 1 cup yogurt or 1 cup buttermilk or 1 cup sour cream 1 cup walnuts, chopped Directions: Preheat oven to 350 degrees F. In a medium-sized bowl, beat together eggs, sugar, and oil. Blend in the mashed banana and vanilla. Whisk together and then sift the baking soda, baking powder, salt, cinnamon, nutmeg and flour. Add all at once to banana mixture. Mix quickly but thoroughly, then stir in the yogurt (I used sour cream) and nuts, mixing until just combined. Pour the batter into a greased loaf pan. Bake the bread for about 1 hour, until a cake tester inserted in the center comes out clean. If the bread begins to brown too quickly, tent it with aluminum foil after 40 minutes in the oven. When the bread tests done, remove it from the oven and place on rack for 15 minutes; after that, remove from pan and place on rack to finish cooling completely.
