I'm thinking just dip chicken in beaten egg, then in breadcrumbs. Cook in oil in skillet. Put in casserole, cover with sauce, mozzarella, and Parmesan and cook in oven for a while. Does this sound about right? We keep breaded chicken tenders in the freezer for quick meals. Sometimes after we have pasta & sauce, I will use up the leftovers by baking the chicken tenders then throwing some sauce and mozz on top. It is quick & yummy. Coat them in bread crumbs seasoned with salt, pepper, garlic, and basil. Fry them in a bit of olive oil for a few minutes. Move them to a baking sheet. Top them with Parmesan cheese and bake. twoforjoy Posted June 15, 2011 Share Posted June 15, 2011 I pound chicken breasts nice and thin, then dip them in olive oil, and then dip them in a mixture of bread crumbs and parmesan cheese (about 1/4 cup cheese to each cup of bread crumbs). Then I bake them at 400 for about 15 minutes. Then I pour pasta sauce over the breasts, and then cover with cheese (mozzarella or an Italian blend, with some parm sprinkled on top) and bake for another 5-10 minutes. That's it.
