I've been grinding my own grains for making fresh bread, and always end up with a little extra. I wasn't sure how long it would be good. And our bread's never stuck around long enough for us to find out how long it takes to go bad. :D But I hear that Dough Enhancer helps keep it from getting too crumbly if it's still around after two days.
