Hillary in KS Posted June 19, 2010 Share Posted June 19, 2010 I bake a yellow or lemon cake in 2 round cake pans. (I prefer lemon.) When they are cooled, put each circle on its own plate, and slice in half THROUGH THE MIDDLE OF THE LAYER. (So now you have 4 complete thin circles. NOT 4 thick half circles.) Set aside the tops of each cake. On the bottom halves, spread a layer of Cool Whip. Cover the Cool Whip with slices of kiwi (peeled, of course). Top the Cool Whip/ kiwi layer with the top half of each cake. To make it pretty, just before serving I dust with powdered sugar. Sometimes I'll lay a clean doily over the tops of each cake and THEN sprinkle with powdered sugar. When I lift the doily off, the tops of the cakes have a pretty white pattern on them. :) It's a cool, light, fruity dessert that's just perfect for summer! Amy in KS Posted June 19, 2010 Share Posted June 19, 2010 Lemonade Pie is awesome! 1 can frozen lemonade (you can use raspberry, strawberry, whatever you like) 1 can sweetened condensed milk 1 tub cool whip Mix together and pour into a graham cracker crust.
