This works for a large crowd with whipped cream. It is so rich, you need only give a sliver per adult. In a 9" cast iron skillet (10 will do in a pinch) melt a stick o butter spread 3/4 C dark brown sugar in the butter open a can of pinapple rings...size....well, the one that's about 6 inches high and 3 across Put every ring in...one in the middle, a ring around, break up the last and stuff the holes and spaces Pour over the following batter and bake at 350F for about 40 minutes until the top is brown and it's springy. Let cool a bit. Invert OVER THE SINK and serve warm with whipped cream, although this stuff makes GREAT cold on the morning after. Batter: Sift: \1 cup all purp flour (not cake or it will overflow) 1 teas sat 1 teas baking powder stir in One cup of white sugar add 5 T of the juice from the can (I drink the rest) and 3 egg yolks. Michele, in this case I actually need the cake. It's my dad's fav, and he's coming for Christmas. Again, I used the Papered Chef Recipe, what I did was put a pineapple ring and cherry in the bottom of a muffin tin, then I filled it up with the mix. Make sure you grease the tin well. Serendipity Posted December 21, 2009 Share Posted December 21, 2009 Pineapple Casserole 3 C soft bread cubes 1/2 C soft butter (we use Earth's Balance dairy free) 1 C sugar 2 eggs (beaten) (we use Ener G egg replacer) 1 C miniature marshmallows (I use a heaping cup) 1 20 oz can crushed pineapple Mix soften butter, sugar, and eggs together. Add pineapple, bread cubes, and marshmallows. Place in 2 qt casserole that has been sprayed with PAM and bake at 350 for 45 minutes to 1 hour. We double this recipe. It's incredible with ham and wonderful warm or cold. Thank you sooo much! I am excited about serving this to my family.
