I need a kid-friendly bok choy recipe. Help?

I have some bok choy I need to use up. I like it in stir fry but that didn't go over so well with my 7yo DS.

 

Miso soup?

 

Otherwise I'm pulling a total blank.

 

Anyone have a good recipe?

 

It doesn't have to be THAT kid-friendly. He is used to eating some pretty far out things. He just didn't like the stir-fry.

I have a great soup recipe:

 

Asian Big Bowl from Kosher by Design, Short on Time by Susie Fishbein

 

1/2 small head Napa cabbage, about 3/4 lbs.

1 small head bok choy

8 cups chicken stock

2 boneless, skinless chicken breast halves, sliced into very thin strips

1/4 cup grated carrot

1 packet of Ramen noodle (discard seasoning packet)

1 T Miron rice cooking wine (I exclude this)

2 T soy sauce

3 scallions, sliced very thin for garnish

 

Thinly slice the cabbage and bok choy. Set aside.

 

Pour the chicken stock into a medium pot and bring to a simmer over medium heat. Add the chicken, carrots, cabbage and bok choy. Simmer for 5 minutes or until chicken is done.

 

Add ramen noodle and cook for 2 minutes. Remove from heat and stir in the Mirin and soy sauce.

 

Ladle into bowls. Garnish with sliced scallions.

 

Of course you can substitue or be creative with the ingredients, but this is very tasty and my kids liked it.
