Tanya in KS Posted July 14, 2009 Share Posted July 14, 2009 Okay.. so I was helping my daughter make mulberry jam for 4H and "I" did not read the recipe right - we used powder pectin instead of liquid pectin thus her jelly is syrup. But I don't remember what it said, so I'm not much help. I'd compare how much sugar and pectin I added compared to what should have been added, add more of whatever it needs and try it again. I don't think it should matter what kind of pectin you used, except that the different types need different ratios of ingredients. Does that make any sense? My sisters and I used to hope like crazy that some of our mother's raspberry jam wouldn't set properly.... so good on Breyer's vanilla ice cream. I did some strawberry jam a while back and had to double process (I think I didn't add enough sugar :glare:). Also, sometimes jam takes a while to set up.
