Quivers cinnamon rolls made GF?

This is my go-to recipe for sweet rolls, but as of April I have a child with celiac. Has anyone made cinnamon rolls successfully using the 1:1 GF flour mixtures? I haven't yet ventured into the realm of mixing flours yet. I mixed the dough earlier but so far no sign of rising😠

 

Any tips? Recipes? Thanks

No, that won't work. :( The 1:1 mixes are for quick breads only. Try Bobs Red Mill GF pizza crust mix; it's our favorite for cinnamon rolls! They won't be the same texture, no matter which flour mix or method, but the flavor will be good.

 

Edited to link the recipe...this will get you started as a beginner gf cook. There are better recipes out there once you get used to working with a zillion flours and methods! But if your child needs a cinnamon roll now, start here. :)

Oh yes, Bob's Red Mill pizza crust mix makes the best cinnamon rolls!!

 

Just FYI, I've heard rumors that Bob's flours have some cross contamination issues, so if your daughter is very sensitive you might try an alternative GF pizza crust mix but use Bob's recipe.

These are the best GF cinnamon rolls.  They use 123 Biscuit mix.  (I've tried numerous recipes- daughter was diagnosed before celiac was cool (2003).)

 

Cinnamon Buns

 

 

Make a package of 123 biscuit mix.  Roll it out between 2 pieces of plastic wrap.  Carefully, remove top piece of plastic wrap.  Top dough with:

 

6 TBS melted butter

 

Then, sprinkle with:

 

1 cup sugar 

1/3 cup cinnamon

 

Roll up dough.  Slice into pieces and place in greased 9†cake pan.  Brush with heavy cream.  Cover with plastic wrap and refrigerate for an hour.

 

 

Cook for 40 minutes at 375.

 

While still hot, top with:

 

1 cup powdered sugar

3 TBS butter

2 tsp milk

Not sure what the rumors are re: Bob's, but I have always found Bob's to be very careful company re: cc.  I'd hate to see a company who was one of the first to address cc and make GF products lose business because of 'rumors'. However, if you have sources/facts please share because that would be very important to get out to the GF community.

I feel your pain. My DD7 was diagnosed in April, too. 😢 Let me know if you figure it out!

I have a celiac son (diagnosed a year ago). I have kind of given up on cinnamon rolls right now - they just aren't the same. But we have liked this cinnamon swirl quick bread (http://glutenfreeonashoestring.com/cinnamon-swirl-gluten-free-quick-bread/) made with better batter flour (a little pricey but I just bought 25 lbs for the lowest price I've seen and it makes spectacular cookies). Cinnamon swirl pancakes are a big hit too. http://www.recipegirl.com/2011/03/01/cinnamon-roll-pancakes/ Just sub in your favorite gf pancakes and use their swirl recipe. There is plenty of swirl for a 2 cup of flour pancake recipe.

You can make of it what you will, and do your own research about the cross contamination issues of Bob's if you are interested. I just wanted to give the heads up because my own daughter has had issues with Bob's.

This is my favorite gluten-free cinnamon roll recipe for when you are ready to try different flours and do your own thing.  They are just amazing. I think I have tried three recipes and this one wins hands-down. People can't tell they are gluten-free.  FYI, I use the millet flour.

The prepackaged mixes for pancakes and muffins that we've tried have been ok, but not great. I'm hopeful that there are recipes out there that are better...this child is also diabetic so she's no stranger to compromise but it still is hard.

I don't know what the substitutions are for diabetics, but for pancakes, we use the Alton Brown Pancake recipe and I sub 3/4 cup gluten free flour for every 1 cup of All purpose. All of the rest is the same. If you can sub something for sugar, maybe it would work?  Since we usually make one batch regular and one batch GF, I only make 1/6th of the dry mix recipe for GF.  It usually makes about six to seven pancakes.
