Holly in FL Posted March 16, 2009 Share Posted March 16, 2009 Here are a few things we do: *banana slices (coins) with a dab of natural peanut butter and Polaner's All-Fruit *crackers (usually Triscuits or Ritz) with cream cheese or sliced cheeses from a block...like Cabot chedder or Amish havarti...whatever is on sale that week *apple slices...usually served with the above crackers *Almond Muffins (recipe below) ~Holly *Almond Flour Muffins* 3 eggs, room temp 1/4 cup honey 2 cups finely ground whole almonds (use blender for this) 1/4 cup melted butter 1/2 tsp baking soda 1/8 tsp salt In blender, grind whole almonds as finely as possible. You may need to stop the blender a few times and scrape down the sides. Add remaining ingredients and blend until smooth...scraping sides and bottom of blender when needed. Pour into greased muffin tins...or paper-lined muffin tins and bake at 400* for about 15-17 minutes. Do not over-bake these or they will be very dry. I always check them with a toothpick after about 12 minutes. I get around 9-12 muffins...depending on how high I pour the batter into each muffin space. I also make these in those tiny muffin tins. I usually check them after about 6 or 7 minutes. Note: You may still want to spray the paper linings with non-stick spray because they stick a little. It's not too bad...but, it might help then not to stick at all. I don't do it...but, I just wanted to note the slight sticking in the paper cups.
