Chicken Salad Recipes

Give me your best recipe :001_smile:

 

I had chicken salad once in a pita(the chicken salad has chow mein noodles in it). If by chance you know this recipe, please let me know.

I thought it was a Pampered Chef recipe but I couldn't find it.

This one is a hit in our house: The family loves when I make chicken soup because they know this chicken salad will follow.

 

3 cups chicken, diced

1 rib celery chopped. Sometimes I replace the celery with a carrot.

2-3 teaspoons chopped dill

salt & pepper to taste

2 Tbl. fresh lemon juice

1 cup of mayo.

 

Mix chicken, celery, salt, pepper, and dill together . Mix lemon juice and mayo together. Add to chicken.

 

Sometimes I add slivered almonds.

Chopped (cooked) chicken

celery - medium dice

green onion - chopped

whisk a few shakes of curry powder into your mayo before tossing

My grandmother always put diced pineapple chunks (well-drained) or halved red seedless grapes into chicken salad.

I love it best served over butter lettuce, with a buttery croissant on the side. :)

I do not have an official recipe for my fruity chicken salad in pita. But here's how I make it.

 

Chopped or shredded chicken, either canned or left over from roasted chicken. Prefer the ease of canned chicken plus it usually has flavoring added.

 

Tart crisp apple, cored, and chopped.

 

Canned pineapple tidbits, well drained.

 

Chopped celery, optional.

 

Raisins, optional.

 

Roasted or toasted almonds or pecans, optional.

 

A creamy dressing like mayo and honey mustard dressing OR mayo, mustard, and honey, OR use a compatible flavored yogurt dressing.

 

Cinnamon mixed into the creamy dressing. I use quite a bit of cinnamon. I've substituted allspice when out of cinnamon.

 

 

 

The apple, pineapple, chicken, cinnamon and creamy dressing are really the only essential ingredients. Sometimes I toss in grapes or strawberries.

Here's how I do it.

 

4 chicken breast..cooked and diced

2 ribs of celery, thinly sliced

1 cup of chopped pecans

1 cup of raisins

1 cup of grapes (seedless)

mix with mayo until the consistence you wish for and season with salt and pepper. I put this in the refrig for a couple of hours then serve on fresh crossiants. Yum!
