Sure, it's part of the job (at least for the advisor), but these profs are dear to the student. Said student doesn't have a lot of money to spend on gifts but wants to do something special. I think these are appreciated, don't take up much room (for minimalists), and can be re-read later so can be enjoyed for years to come. I would purchase quality paper/notes for this though - if I know something the professor particularly appreciated, I'd get a card specific to that (like someone who like Escher, I'd get a card with one of his pictures on it). I imagine when said professors die, their relatives would appreciate finding and reading those letters too.
