DS did most of the Intro to Computer Science and Electrical Engineering one and really loved it. It was very challenging, even though he has high math ability. Several of the events are engineering focused or related. Towers- build a balsa wood tower to hold weight. Judged on meeting specs and weightbheld vs weight of the tower. Helicopter build a rubber band powered helicopter. Mousetrap car. There are some that are more physics related like optics. The rules are now free to download www.SOinc.org The site Www.scioly.org had forums and a lot of event info. I think you could have fun with the builds even if you don't compete in an official team.
