StaceyinLA Posted October 25, 2016 Share Posted October 25, 2016 (edited) So in keeping with this whirlwind of a year (2016 hasn't been kind), I now have my entire family living back at home for a time (kids, in-laws, and grandkids). My oldest dd and her husband sold their house to build and are living in our guest house, my next dd and her husband had a pipe burst and flood their home (that they bought 5 months ago), so they are living here until bathroom and floors can be redone (which is fun with all the other people trying to rebuild in the BR area right now), and my 2 single adult kids are both living at home as well. We went from empty nest to quite a FULL nest really quickly! Most nights I am cooking for a CREW! Everyone really wants to eat paleo-ish. We haven't been because budget-friendly food seems to almost require carbs to make it more filling and stretch it. Please share some ideas of paleo things that are easy and cheap. Mmm! (add in cheese and sour cream if you are okay with that) Meatballs with a gravy or marinara (are tomatoes allowed?) Nice with mushrooms and zucchini Pulled pork (homemade or paleo friendly bbq sauce) with slaw salad Grill a bunch of chicken, serve on spinach salad, strawberries, bacon, nuts (feta) or add hard boiled eggs and have a California Cobb salad. Roast, gravy, mashed or roasted cauliflowers Roast chicken, salad, roast veg Burgers wrapped in lettuce. All the toppings, mushrooms, bacon, (cheese) mustard, etc Eggs - all ways. Hard boiled. Scrambled. Omelet. Fried. Quiche without the shell. With sausage and/or bacon. Soup! I love chicken noodle soup minus the noodles. Olive Garden Zuppa Toscana (I slice in cauliflower instead of potatoes, but maybe you guys eat potatoes) so spicy and great!! Cream of Broccoli - one of my favorites! Now is a good time to put a couple of turkeys in the fridge - cook & shred the meat for the freezer Soups and stews are good, especially if you eat potatos. bolt. Posted October 25, 2016 Share Posted October 25, 2016 (edited) I've found there are two major ways to stretch things without many carbs: I call them, 'lettuce and broth'. "Lettuce" means that I frequently want to start meals with big salads, and consider adding a serous amount of veggies to everything. Some veggies are carbier than others, but I'm not at that point in my strategy -- I do tons of veggies of all kinds. "Broth" means that I add water to lots of things and modify it into sauce, broth, gravy, soup... Whatever. The wetter the better. Example: Instead of meatloaf for everyone, I can make meatloaf soup with added veggies, a side vegetable, and a starter salad. Cook a bunch of chicken in the instant pot or crockpot. (Budget friendly use the whole bird and then remove skin, bones, etc. faster but more expensive, use boneless pieces.)Pour out at keep the broth. Shred the meat. Use half for a chicken salad meal- I like doing a chicken nicoise or a greek chicken salad. Use the other half along with the broth in Tom Ka gai soup. She has several cookbooks, and a lot of the recipes from these books are on her website. The recipes are extremely flavorful with a variety of ethnic influences. There are some weird ingredients but if you aren't a strict follower of Paleo you can make some simple substitutes (eg. soy sauce vs coconut aminos, butter vs gee, vegetable oil vs coconut oil).
