We are gluten and Top 8 allergen free here, but these recipes don't need to be. I'm not up on the regular cupcake scene anymore! Bonus for a frosting/icing recipe to go with it! Truthfully, I'm just here to watch the thread because although dd loves to decorate cupcakes, I sigh when I have to make them. Seasider Posted February 4, 2016 Share Posted February 4, 2016 I think box cake mix is usually pretty good. It's the icing that makes a difference for me. I will take the time to make a simple butter cream and skip the canned stuff. Appx 4 C XXX sugar 1 stick butter, softened 1 tsp vanilla Dash salt 2-4 Tbsp half-n-half Blend all together. Adjust consistency by adding more sugar or cream. Remember that liquid food coloring will also affect consistency. umsami Posted February 4, 2016 Share Posted February 4, 2016 For chocolate, I love the mud puddle/wacky cake recipe that I think I first got in one of the Moosewood books. Bonus, it's vegan....but you'd never know. Tastes great. Always moist. For white cakes, I like the Better Homes and Garden Busy Day cake.
