They finally decided on a two layer carrot cake with cream cheese icing. Now I need your help! What's a great carrot cake recipe? Yours swaps some oil for applesauce. :) Southern Heritage Carrot Cake I don't use a mixer for carrot cake though, OP. It mixes together like a quick bread/muffin because it uses oil.
