Dh is starting to get on board with lchf eating!

Ok, not really, but he likes my low carb pies. :laugh:

 

I think I have a basic recipe for a cream pie in a nut crust down, and was talking about experimenting with some other crust options for fillings that don't go as well with nuts. Dh suggested trying a coconut crust. If I use unsweetened coconut flakes, butter, and egg is that still low carb?

I can't answer your question, but I'd love to hear about your tried and true pies!!!

 

The basic one is really easy. For the crust I just use 2 cups of almond meal and 1 stick of melted butter, mix and press into pie plate and refrigerate for at least 30 minutes. The filling is 8oz of softened cream cheese, 8 oz of ricotta cheese, and 1/2 cup of heavy cream with 1 tbsp vanilla extract and 2 tbsp maple syrup.

 

You can add peanut butter, or pumpkin puree, or mashed fruit, or whatever to change it up, or just top it with fresh fruit. I'm told it isn't super sweet, but since I don't eat sugar it tastes sweet to me.

 

I had a thread about lchf desserts a couple of weeks ago I think and got some good recipes that I have tried, but now it has disappeared from my content so I can't link it.

Please let me know if you come up with any really awesome add-ins. I have done the base recipe with berries on top, and a version with lots of cinnamon added in and a little extra maple syrup on top, and am doing the peanut butter this week. (Dh has been on a big dessert kick, and having a lchf dessert already here means he won't come home and bake a pan of brownies!)  I've also done 2 of the recipes from the other thread - the lemon bars were divine. Dh loved them. But this pie is really easy and quick so I keep coming back to it.
