Do you have a favorite dairy free gluten free baking mix?

Anything other than dairy and gluten you are avoiding?

 

Pamela's Baking mix doesn't have dairy in it.

 

Arrowhead Mills GF All Purpose Baking mix is also dairy free.

 

Both have xanthan gum though and I know some people avoid that.

 

 

I love Pamela's but it actually does have milk - buttermilk powder. DS gets horrible stomach issues every time I use it so I need to switch. I will look into arrowhead mills. thanks

The Pamela's Pancake Baking Mix has dairy in it. The Pamela's Bread Mix and Flour Blend does not. Sorry I didn't clarify. That's the one I use. :001_smile: Here are the ingredients:

 

sorghum flour

tapioca flour

white rice flour

sweet rice flour

brown rice flour

evaporated cane sugar

chicory root

millet flour

molasses

honey

rice bran

sea salt

xanthan gum

This is what I use.

 

Gluten Free/Casein Free

Master Baking Mix (Like Bisquick)

Free of gluten, dairy/casein, and soy

 

3 cups brown rice flour

2 cups sorghum flour -or- millet flour (I usually do half and half of each flour)

1 1/2 cups tapioca starch

1/2 cup potato starch

1/4 cup almond flour

1/4 cup ground flax seeds (optional - great for a whole grain texture & extra fiber!)

1 tablespoon + 1 teaspoon xanthan gum

2 teaspoons salt

3 tablespoons baking powder

1/2 cup coconut oil or spectrum palm shortening (I use vitacost brand coconut oil)

 

Whisk all dry ingredients together thoroughly. Cut in shortening, until it is thoroughly mixed into the dry ingredients and looks like tiny peas. Store in a tightly-sealed container in fridge or pantry. Makes about 7 cups.

What were you using? We really like good old fashioned Bisquick from Betty Crocker, we'll, maybe not that old since they came out with it the GF one in the last year. Its $$ but it makes my life easier, makes really good pie crusts for pumpkin pie too lol:)

 

 

I was using Pamela's Baking mix, but it has buttermilk. I am not that sensitive and I like it. DS has celiacs and before we caught it, it created so much havoc that he has also (hopefully temporarily) lost his ability to digest any amount of dairy. So, even that little bit of buttermilk powder is too much for him. :001_huh:

I've had really good luck with a variation of Jules' Gluten-free flour. I mix mine up myself (oops, forgot to pick up my 25 pound bags of potato starch and rice flour from the health food store tonight!). This is the recipe I use:

 

1 cup white rice flour

1 cup potato starch (not potato flour)

1 cup cornstarch

1/2 cup corn flour (or sorghum flour)

1/2 cup tapioca flour or tapioca starch

4 teaspoons xanthan gum

 

I quadruple the recipe so I have plenty on hand. I use it for pancakes, waffles, banana bread, Texas sheet cake, chocolate pudding cake, etc.
