Dayle in Guatemala Posted July 9, 2008 Share Posted July 9, 2008 I love this recipe! It's really yummy and easy to make as well as healthy, if you cut the sugar a little! Anyway, here it is: Cucumber Salad 3 large cucumber peeled and thinly sliced 1 c. white vinegar 3/4 c. water 3/4c. sugar (you can cut back on this if you want) 1 tsp. salt cayenne pepper to taste (I like it hot so I add a lot of cayenne!) dash of dried parsley flakes 1/8 tsp. black pepper dash of dried leaf basil Combine all ingredients except the cucumbers; heat until sugar melts. paula j Posted July 9, 2008 Share Posted July 9, 2008 Here's my family's favorite cucumber salad 2 large tomatoes 2 large cucumbers or 4 or 5 small 1 large sweet onion salt and pepper to taste 2 Tbsp sugar 1/4 cup canola or olive oil 1/3 cup white vinegar Slice one tomato in a bowl, salt and pepper it, slice one large or two small cucumbers on top of this and salt, slice part of the onion on the cucumber, follow with another layer as above, make sure there is plenty of salt and pepper on this as it helps form the dressings, sprinkle sugar over the top, pour oil and then vinegar over all and chill for at least an hour. Add vinegar, water, a bit of oil, salt and mint. Refrigerate to let flavors mix. mmmm Anyone else with a cucumber recipe for those of us who over planted? Slice cuccumber and add 3 Tablespoons rice wine vinegar 1 tablespoone water. Slice ginger, peel it add it. Also add 1 teaspoon sugar. Remove the ginger when you serve from fridge an hour later.
