Can you salvage/use overcooked turkey leftovers?

Today was the first day I've roasted anything in our oven. The turkey was done 2 hours before it should have been finished. I took it out just before the internal temperature reach 160 to try to prevent overcooking while I waited for everything else to be done, and put it back in to finish when the final sides were finishing. It ended up too dry.

 

I always buy huge turkeys for the leftovers (turkey soup). So now I have about 20 pounds of overcooked, dry turkey.

 

Can it be salvaged?

Well, to me, it's hard to even chew and swallow when it is overcooked. The dryness just sucks all of the moisture out of your mouth.

 

So far, I figured I'd add the turkey to soup at the end of cooking. But I've never seen turkey broth in the store. To make broth with the already overcooked meat would make the soup awful.

Make the stock with the carcass (bones), then strain it and add in the leftover overcooked meat. If you still don't have quite enough, you can extend it with chicken stock.

 

(BTW, many stores do carry turkey broth at this time of year... Check in the boxed soups, not the cans.)
