Question about Freezer Storage Time & Ground Beef

What are the reasons for this -- bacteria or "freezer burn" taste?

 

 

I had been under the impression that freezer burn is caused by air in the packaging, which is why I often use freezer paper as well as a ziploc when dividing up something like a quantity of chicken breasts. Your query led me to the Library of Congress:

Note that freezer burn affects taste but does not contaminate the food.

Bacteria is not going to be an issue with frozen food. The only reason for a max. storage time would be food quality, i.e. freezer burn.

 

I have ground beef (and other meat) in the freezer much longer than three months. As long as its packaged correctly so that air isn't getting to it, it should be fine.
