Tibbie, this rundown is PERFECT!!! I was trying to figure out a way to say this correctly and you did just that. I think we may live close to one another! ;) I would add that the park system in Hendricks county is THE BEST! If that matters to you, I think you should definitely check it out. -

Feel free to PM me if you'd like. I've lived in the burbs of Indy for over 15 years. I can probably give you the comparisons of most of what you'd like to know. We had a death in the family and are having the funeral tomorrow, so if you don't hear from me for a couple days, that is why, but I will get back to you when I can. -
What is with the TWINS epidemic lately?!

I have 12 year old twins -- probably identical -- NO history of twins on either side, NO fertility drugs, I was only 30, no other losses. At the time we lived in a subdivision on at the beginning of a cul-de-sac. There were 8 females of reproducing age. My friend had twins (no fertility), I then had twins 1 year later, then within the next year, two others were pregnant with twins (both fertility). Then, about 5 years later, after all of us having left that neighborhood and moved on the 5th one of us ended up having twins (no fertility). So, essentially 5 out of 8 from one small cul-de-sac area. -
Does anyone know if it is still possible to get very large/extremely significant scholarships to a 4 year university if one has completed an associate's degree? And I don't mean someone trying to go back to school after a long period, but rather just getting the associates and then going straight to the 4 year college.

I have everything already planned and paid for this year, but I will DEFINITELY be keeping your courses on the horizon for next year! -

Yeah, except my kids aren't really young -- they are 14, 12 and 7. The 12 year olds are the best at trying things. They aren't the problem. The 14 yr old is the absolute worst and then the 7 year old. It's my oldest who is the worst about REFUSING to try ANYTHING and not liking ANYTHING. That has got to change and I think that with her it's going to need to be the "eat it or eat nothing" strategy. She's too old to be given the "3 bite" rule. I'm just trying to stock the good stuff and if there is nothing else, then there is nothing else. I will be using the "3 bite" strategy with the youngest though. -

Thanks for all this info ladies. I am not going GF/low gluten due to celiac for anyone in our family, but I do think it may be causing some issues and I feel it's definitely worth giving it a try. I really want my kids to go low carb and I think one of them needs to cut out gluten as well. I'm going to start putting some books on hold at the library and trying some recipes to see what I can come up with. A BIG part of the problem is the way I was brought up eating -- therefore my kids have been brought up in a similar fashion (although quite a bit better than what I was). My kids aren't veggie eaters -- because my hubby and I didn't eat many veggies. I am getting much, much better, but now I have kids who don't want to try them or just say they don't like them after one bite. Same with beans -- we don't eat really anything with beans. I'm really going more with the "either we eat this or we don't eat" because I think that is truly the only way we are going to be able to do this. KWIM? -
"I just can't do the grains. Every time I do, I just crave them all the time." I totally get that! My kids LOVE, LOVE, LOVE grains and I used to. When I personally went low carb about a year and a half ago I was surprised how easily I was able to kick my bread and pasta habits. I didn't crave those things for over a year. It's the chocolate, sweets, and chips I JUST CANNOT KICK for the life of me! Anyone have any good replacements for those?

Haven't followed any other threads about this before, so it may have already been mentioned, but have you looked into Laptop Lunches? They have a very good website with great lunch ideas also. -
Is it even possible to cut out gluten, eat low carb, high fiber (and okay -- not worry about the "good" fat) all at the same time? And if so, can it be done and still have actual meals? Let me say that my family are PICKY eaters -- as in they eat regular run of the mill food. Switching to anything new is difficult for us.

Okay, now I need to get those books listed on Amazon. (Again, let's just pretend that I haven't spent a ton of $$ already on the whole-wheat bread baking books:glare:) I must admit that much of what you all are talking about is foreign to me as I am just now considering limiting the gluten intake of my family. What else do you do with rice flour? Can it be used to make any type of a bread-like product (bread, rolls, biscuits, flatbread, pizza crust, etc)? -
What can I use my Nutrimill for if we go GF or very limited gluten? (Let's pretend that I don't have at least 150 lbs of wheat berries sitting in the basement:glare:) So if I want to use almond flour, oat flour, coconut, and whatnot -- can I do any of my own grinding in the Nutrimill (and possibly make in bulk and freeze some)? If so, how do I go about getting what I need to grind? I had to order the wheat berries and have them shipped or pick them up -- is it the same for other things? Thanks for any help anyone can provide!!

Oh thank you Wendy! I am going to get eggs today and I am going to try the same thing in my toaster oven. Do you think I can just set them on the rack without putting them in anything? I don't have a muffin tin to fit my toaster oven, but I think the eggs would sit just fine without moving. I DO have tremendous problems boiling eggs. I ALWAYS leave things boiling for too long. I walk away from the stove and it's as though I have no recollection of what I just did. Yes, I could set a timer, but I also have to remember to do that. It's simply ridiculous. -

Yes Wendy, thanks for being the guinea pig for us!! I don't have any eggs right now, so I thought I'd ask before running to get some. If it DOES indeed work and the eggs are easier to peel, then I am going to see if I could also bake them in my toaster oven. It's a convection bake toaster oven, so I am wondering if it would do the job. -
Okay I saw on Pinterest last night that you can supposedly bake eggs instead of boiling them. They said to put each egg into a muffin tin and then bake for about 25 minutes at 325. States that the eggs taste better and are easier to peel. I would love to have more hard-boiled eggs around on a regular basis and this seems like a much easier way to do it, but I'd like to know if any of you wise ladies has actually tried this method and had success. I really find it hard to believe that this would work great and yet I've NEVER heard of this before. I'm apprehensive!!

I'll join you tonight. I already had my 2 huge scoops of tin roof sundae along with a side of moose tracks though. So sorry I didn't share! How was your weekend? Spent the last night at the lake for our vacation on Friday night. Packed up and headed 1/2 way home yesterday and then got up and drove the rest of the way home today. Caught up with some neighbors and did lots of laundry. Can you tell me what you have planned for tomorrow without hyperventilating? Possibly. Tomorrow I start watching the 4 other kids I take care of before and after school again. I need to be up around 6 a.m. It's almost 11:30 now and I have no intentions of getting in bed any time soon. We will need to finish all of the laundry and get the house in order. My oldest 3 will start some minimal "pre work" for this school year. What is your favorite group game? I love games! It really all depends on who I'm playing with. This past week on vacation I played some Hand & Foot and some Rummicube. Thanks for asking!
