TechWife
I made these potatoes Sunday and they were really good. I did grate some fresh Parmesan on the top. I would like to make them for a small brunch. Do you think I could make them up and bake them about 20 minutes, refrigerate them overnight and then finish baking them the next morning? I’m trying to save some morning prep time. What do you think? https://pin.it/5CGMZN6
kbutton
I think they probably could, but if you cool them too fast, they might turn black and blue.

Would it help if I let them cool to room temperature before I refrigerate them?

katilac
I think you probably could, letting them cool down before refrigerating like kbutton said. I'd be a little worried that they might dry out, though, bc there's nothing saucy on them, just on top of them. If the main concern is not wanting to peel and slice ptoatoes (bc the rest looks pretty quick and simple), you can do just that the night before and store the slices in the fridge, completely covered with water. Cool slices shouldn't add more than a couple of minutes baking time. 3
