We buy the "Medium Amber," but they sell a more expensive "Fancy" one. It's good stuff. So, grade B is more "maple-y" than grade A, grade C is darker and even more flavorful. There are also variations within grade, such as Grade A Fancy and Grade A Dark Amber, which is what we currently have a gallon of in our storage. I like Grade B best.
