SoCal_Bear
This was posted on another group I am in. Pixar in a Box at Khan Academy is new! They are planning for this to be a multi year projects to develop lessons to teach kids about animation. There are a few lessons available now. https://www.khanacademy.org/partner-content/pixar
bookbard
We've done the storytelling lessons with my bright 6 year old. I highly recommend them - great not only for writing stories but for analysing films and books. And entertaining!

Arcadia
My kids tried it when it launched in 2015. They just keep updating and expanding on it. My kids lost interest fast though. http://www.animationmagazine.net/schools/khan-academy-launches-pixar-in-a-box/?doing_wp_cron=1492706191.2038729190826416015625
Lucy the Valiant
There's also a Pixar exhibit going around to different science museums - I was skeptical of its science, and figured it would be just a STEM-phrased advertisement for Disney, but was very pleasantly surprised. So - tangentially related - if your kids enjoy the Khan Pixar stuff, the exhibit at science museums is also worth the trip!
