Hikin' Mama
I have a gluten free crust recipe, but my filling recipe calls for flour in the actual pie, presumably to thicken it. I've never made a gluten free fruit pie before, so can I substitute cornstarch instead? I use cornstarch to thicken many other things, but usually I'm stirring it into an already heated sauce or gravy. Has anyone done this before? Thank you! Well, I found this: http://www.kingarthurflour.com/recipe/pie-thickener.html So I'm going to go ahead with the cornstarch according to their chart. Classic Mom
You can use cornstarch. You can also use rice flour, a GF flour blend, or potato starch. For a pie filling any of those should work fine.

This is for my college son driving a long ways through a storm, so I want to get it right. :)
AnniePoo
Rice flour seems to work fine for that kind of thing. I actually prefer it to using a flour blend.
Katy
Cornstarch is great. It also works really well as a substitute for flour in gravy.
AmandaVT
My friend swears by tapioca flour for her apple pies. I have tried it and it works well, but I never think to buy it and just end up using AP.
