HappyLady
I want to make this eggnog cheesecake recipe that I found, but it calls for about 3tbls of brandy or rum. I really don't drink so we don't have any in the house and I don't know what either taste like to come up with some substitutions. Could I use a rum flavoring? If so, how much do you think? Or should I go with maple syrup maybe? Any suggestions?
nmoira
You could use rum extract. It's what is used in commercial egg nog.
AK_Mom4
If you don't have any run extract, I think maple syrup would be yummy in your eggnog cheesecake. But you could also just add the same amount of water and it would taste good too.
Laurie4b
Maple syrup is going to be way sweeter and in a different taste category than rum or brandy. If you use it, I would add less sugar in terms of flavor (though I don't know if that will affect texture....) Do you have a neighbor you could borrow 3 T from? :) or the rum extract will go with the flavor.
BrookValley.
I would use rum extract or just get a mini from the liquor store.
Belacqua
I would try substituting orange juice (and maybe replacing a few teaspoons of that with molasses).
LaxMom
I would use rum extract or just get a mini from the liquor store. Yup. Those little airplane bottles behind the counter are handy for that sort of thing. Rum extract will give you a rummier flavor, though, so you'll want to cut the measure if you use that. dbmamaz
i would probably just increase the vanilla.
kateincali
Or you could try a bit of almond extract or some other extract you do happen to have? Just for that little extra punch.
