5LittleMonkeys
Well, the egg adds moisture and acts as a binder in cookies. Maybe try mashed bannana or applesauce.

ThreeBlessings
1/2 c mashed banana, 1/4 c blended prunes, 1/4 c applesauce, or 3 tbsp oil + 1 tbsp water all equal 1 egg. I've tried all the mentioned fruit substitutes with good results. :) Mashed banana is superb with chocolate chip cookies. Desert Strawberry
Cookies don't really need eggs. You can leave them out. Add one tbs per egg of water if dough is dry. For everything else, my favorite is 1tbs oil, 2tbs water, 1tsp baking powder. I much prefer eggless baked goods. Moist and light.
Desert Strawberry
You can just let the flax sit in the water and it will get slippery. Flax has a nutty, oily taste.
