SW in IL Posted November 11, 2011 Share Posted November 11, 2011 A few weeks ago a friend of mine was telling me about a restuarant he went to with his wife. He said that the chicken livers with onions were absolutely delicious. This, of course, got me craving chicken livers. I bought some livers and tried and recipe for livers and onions but the onions totally overpowered the rest of the ingredients. So, I'm asking y'all... Does anyone have a tried and true recipe for chicken livers? Prefereably one that includes onions? And hopefully not fried chicken livers (I've never had any luck frying them)? Lucy in Australia Posted November 12, 2011 Share Posted November 12, 2011 I saute the onions, then cook them down (adding a little water to stop them burning to a crisp). When they're really soft & sweet I add the chicken livers (cut in smaller pieces if they are big). When they are nearly cooked I douse them with a good slug (oh yes, I'm all about precise measurements :D) of good quality Balsamic vinegar. Cook gently, mixing, until the vinegar has evaporated a little and the rest absorbed into the livers & onions. I generally add quite a bit of salt but that depends on your taste. It was the first, and only, time I'd ever had chicken liver. I'd love to hear if anyone has a recipe for blackened chicken livers, too!
