Anyone have a tried and true recipe for chicken livers?

A few weeks ago a friend of mine was telling me about a restuarant he went to with his wife. He said that the chicken livers with onions were absolutely delicious. This, of course, got me craving chicken livers. I bought some livers and tried and recipe for livers and onions but the onions totally overpowered the rest of the ingredients. So, I'm asking y'all... Does anyone have a tried and true recipe for chicken livers? Prefereably one that includes onions? And hopefully not fried chicken livers (I've never had any luck frying them)?

I saute the onions, then cook them down (adding a little water to stop them burning to a crisp). When they're really soft & sweet I add the chicken livers (cut in smaller pieces if they are big). When they are nearly cooked I douse them with a good slug (oh yes, I'm all about precise measurements :D) of good quality Balsamic vinegar. Cook gently, mixing, until the vinegar has evaporated a little and the rest absorbed into the livers & onions. I generally add quite a bit of salt but that depends on your taste.

The only other way I make it is as a cold dish of cooked chopped liver which uses Hungarian paprika and cold hard boiled eggs. Here is a good version, spread this on rye bread and be prepared for liver bliss.
