We also have Cheddar cheese, onions, peppers, and eggs to put in -- but no bacon or sausage. :crying: Sigh. Any suggestions? It doesn't have to sit overnight, I don't care when we eat it. :D Thanks! Drizzle cast iron skillet with oo and press shredded potatoes into bottom (think pressing in a crust). Bake at 400 till about half done. Pour in a mixture of eggs, cheese, and whatever you like plus salt and pepper. Cook till done through. I've never actually had if for breakfast, though. Perhaps someone here has it already typed up and ready to go! It's so... very good!! You could use veggie broth instead of chx broth, too... I think....
