Do you have a breakfast casserole recipe using REAL potatoes?

I'd like to use some real potatoes ;) (not frozen, dehydrated, or whatever). Just plain, old spuds.

 

We also have Cheddar cheese, onions, peppers, and eggs to put in -- but no bacon or sausage. :crying: Sigh.

 

Any suggestions? It doesn't have to sit overnight, I don't care when we eat it. :D Thanks!

I make a fritata with potatoes.

 

I grate the potatoes, wash and pat dry.

 

Drizzle cast iron skillet with oo and press shredded potatoes into bottom (think pressing in a crust).

 

Bake at 400 till about half done.

 

Pour in a mixture of eggs, cheese, and whatever you like plus salt and pepper.

 

Cook till done through.

 

I've never actually had if for breakfast, though. I'm sure it tastes the same in the morning as evening, though!

This sounds so good. I love that brown, crispy potato crust, but I don't have a cast iron skillet. Do you think this would work with a Pyrex baking dish?
