helena
Here's the recipe: http://southernfood.about.com/od/pumpkins/r/blbb465.htm. It says to line the pan with waxed paper, but I've read that you should only bake with parchment. Any advice?
Hockey Mom
I've made this recipe a dozen times. I only use parchment when I bake.

1bassoon
I tried baking an apple strudel on waxed paper - the paper smoked, I ended up taking it off and baking it just on the pan. It was a PAIN to clean up :glare: I need to get some parchment paper!
elise1mds
More parchment-touting here. I've only made a jelly roll once, but it came out beautifully with parchment.
Dawn in OH
I made pumpkin rolls last year with wax paper, because I discovered at the last minute that I was out of parchment paper. It didn't melt or smoke. It actually worked just fine...or I was very lucky.
Sun
I've made this recipe with both types of paper, and they both worked. I do prefer parchment, though, because I always feel like the wax melts into the food a bit. I don't know if it really does, but that's what I think about. Cricket
I was at Walmart a couple of weeks ago looking for waxed paper and they didn't even have it. Only parchment paper. Glad some of you are finding waxed paper. It's less expensive. But, to answer the op, I prefer parchment paper for baking too. helena
I have one more question. :) I found two pans that could work, which one should I use? One pan is the right length and width, but might not be deep enough. The other pan is deep enough, and is advertised as being a jelly roll pan, but is one inch too long (according to the recipe). I've never baked a jelly roll so this is new for me. Thanks!

I would go with the one I bolded. :) I've had some bad experiences with batter baking over the rim and ending up on the bottom of my oven. :tongue_smilie: I'm thinking one inch isn't going to make a big difference. I just bought cans of pumpkin yesterday, so I can't wait to start baking my own pumpkin roll. Mmmmmmmm! :)

Sun
Yep, I'd go with the jelly roll pan that's a bit too long. Enjoy!
