Zucchini Recipes?

Wolf was gifted with a monstrous zucchini yesterday. I have no clue what to do with it. I mean, its HUGE. A small one, I'd just slice up and saute...but this? Good grief.

 

I've heard of zucchini loaf, but never made it, and hate risking on recipes that I just pull off the net...Rather have someone that's made it, has a tried and true recipe share.

 

So, anyone have any ideas on how to use up this monster? Tazzie's tried karate chopping it, and hurt his hand, so that's out. :lol:

We found this one this summer. It's quick, easy, and tasty. Our whole family loved it.

 

1 jar (24 - 26 oz) spaghetti sauce

1 can (10.75 oz) chicken broth

2 cups sliced zucchini

1 can (4 oz) mushroom pieces

1 cup Arborio rice (I suspect anything but instant would work)

2 cups shredded mozzarella cheese

cooking spray

 

Spray 3 quart casserole dish with cooking spray.

Combine and mix zucchini, rice, chicken broth, mushrooms, and spaghetti sauce.

Bake at 350 degrees uncovered for 30 minutes.

Remove and stir.

Bake another 15 - 20 minutes or until rice is tender.

Sprinkle evenly with cheese and bake another 5 minutes until cheese is melted.

 

We tend to make two batches at once. Reheated it tastes good too!

My wonderful neighbor, who also gives me zucchini from her garden, gave me her fantastic zucchini bread recipe:

 

Bread:

1 1/2 c. flour

1 tsp. ground cinnamon

1/2 tsp. baking soda

1/2 tsp. salt

1/4 tsp. baking powder

1/2 tsp. ground nutmeg

1 egg, beaten

1 c. sugar

1 c. shredded, unpeeled zucchini

1/4 c. oil (I used melted butter)

1/2 c. chopped walnuts or pecans, optional (we leave these out)

 

Topping:

1 c. powdered sugar

1/4 c. orange juice (or I've used lemon juice, which is also very good)

 

 

Grease bottom and sides of 8x4x2 loaf pan, or two small loaf pans.

In a medium bowl, combine flour, cinnamon, baking soda, salt, baking powder, and nutmeg.

In another bowl, combine egg, sugar, zucchini, and oil.

Add zucchini mixture to flour mixture. Stir just until moistened. Batter should be lumpy.

Fold in nuts.

Pour batter into prepared pans.

Bake at 350 degrees for 50-55 min. or until wooden toothpick inserted near center comes out clean. (You'll not need to cook it quite as long if you use mini loaf pans.)

 

For topping:

(Do this right when the bread comes out of the oven, and is still very hot.)

Mix powdered sugar and orange juice until smooth. Poke holes all over the bread with a big fork. Pour orange juice mixture on top of bread. Let sit until cool. Cut, serve, and enjoy!

My favorites: Zucchini bread as listed in the old Betty Crocker and Zucchini Chowder on Taste of Home.

I don't have either of those.

We love zucchini bread, but here are a couple of other things we like to do with it:

Bethany, that zucchini bread is awesome!

 

Unfortunately, Princess thought so too. She was caught helping herself by the fistful off the top of the loaf. :glare:

 

 

It really is good, isn't it?! But I can't take the credit, my neighbor gave me the reicipe, after I begged her for it because she brought over some of the delicious bread. :)
