SonshineLearner
and... I remember a thread on here about it... perhaps if you search for it. I mention this because there were tons of responses... If I remember correctly :)
weddell
There is a good one in the book Veganomicon. It uses coconut milk and silken tofu. We made the chocolate a couple weeks ago!
HollyDay
These sound good! I'm making Ben and Jerry's chocolate today for my youngest. It is the last ballet class of the year and she wants a treat. It will be the first homemade ice cream of the season!
kalanamak
I make this using vanilla Silk and use frozen apple concentrate, undiluted. Terrific on hot apple crisp. 3 cups soy milk, rice milk, or other non-dairy milk of choice 1 - 14 oz. can coconut milk (regular or lite) 3/4 cup unbleached cane sugar 1/3 cup apple juice 1 T. vanilla 1 T. cinnamon 1/2 t. ground allspice 1/4 t. nutmeg In a large bowl, whisk together all of the ingredients. If you have an ice cream maker, transfer the mixture to the ice cream maker, and freeze according to the manufacturer's instructions. I hope it turns out with 3 cups of regular milk since nobody here is a big fan of soy.
