How many days do you think homemade mac and cheese and potato salad would keep?

My very first... would you eat this! Cooked Thursday night. Now it's Tuesday. Good? Bad?

I am uber-quick to throw out stuff from the fridge - I wouldn't eat it.

I would eat them, unless they smelled bad or are otherwise not fresh. I sometimes use homemade mayo for my potato salad, so I wouldn't eat that unless I'd made the mayo the same day I made the salad. And sometimes other stuff in the salad (onions, for example) can go mushy. But, if it passes the olfactory and visual tests, we'd eat it after 5 days. (probably toss at 7 days, although neither of those items would ever last that long around here...)

Mac and cheese--a week, assuming it had been refrigerated the whole time.

 

Potato Salad--also a week, assuming it was properly prepared/stored and didn't sit in the sun for 4 hours at a BBQ or something.

Well, seeing as I made potato salad on Thursday night as well and plan to eat it for lunch today, I say go for it.:)
