Pink Fairy Posted December 16, 2009 Share Posted December 16, 2009 My favorite cold weather soup is Chicken Velvet. The recipe is very forgiving, and I don't do a lot of measuring. Make a rue with flour and butter to use as a thickening agent. Add 1 part chicken broth, 1 part milk (cream or 1/2 n 1/2 works too). Add chopped up cooked chicken breast. You can leave it like this, but I usually add one or two other things, depending on what I have on hand. Cooked egg noodles, corn/other vegies, or rice are typical. jenniferlee Posted December 16, 2009 Share Posted December 16, 2009 thai chicken noodle soup 1 quart chicken broth some grated fresh ginger (1-3tsp.) 1/2 lemon squeezed 1/4 tsp red pepper flakes (opt) rice noodles leftover chicken (opt) simmer till noodles are done salt or fish sauce to taste cilantro or green onion chopped added in at the end also coconut milk is great in this if you like that sort of thing this is my favorite easy winter soup. the ginger really heats it up. We moved from Louisiana and we used to buy a soup from a meat shop there that had shrimp and corn chowder...awesome!! so, one day I just decided to kick up the potato soup recipe I had.
