We take our frozen peaches, thaw them out just a bit (softer, but not thawed) pour a little milk over them, add a little sugar, then use our hand blender to make "ice cream". amyco Posted August 27, 2009 Share Posted August 27, 2009 I also peel, slice, and freeze whatever we won't eat on a cookie sheet, then transfer to a gallon baggie. It takes all day to cook down, and I pull off about half of it before it gets too thick and use that as syrup for pancakes. HerdingCats Posted August 27, 2009 Share Posted August 27, 2009 Peach Cobbler 2 pie crusts (homemade or pre-made; I use the Pillsbury refrigerated kind) 3 lbs med peaches, peeled, pitted and 1/4 sliced 2 Tbs cornstarch 1 cup sugar 2 Tbs lemon juice lemon zest orange zest almond extract 1/2 tsp cinnamon 4 Tbs melted butter Preheat oven to 375. Lightly butter baking dish. In med bowl, toss peaches, cornstarch, sugar, lemon juice, extracts, zest, cinnamon and butter. Press crust into dish and bake 15 minutes. Cut remaining crust into long strips for lattice. Spoon peaches onto bottom crust and bake 40 minutes. Sprinkle with cinnamon. freeindeed Posted August 27, 2009 Share Posted August 27, 2009 Fresh Peach Pie (my dh's favorite dessert) ~8 peaches 1 pkg. peach Jell-o 1 pkg. Cook & Serve Vanilla Pudding (NOT instant) 1 c. water 1 graham cracker pie crust Redi Whip-optional Combine water and pkgs. of Jell-O & pudding and heat on medium on stove top until sauce thickens. Set aside and let cool slightly. Peel and slice peaches and add them to the sauce. Pour into pie crust. Put in fridge and cool. Serve with Redi Whip.
