She likes pasta a lot, so veggie sauces for that would be good (beyond the basic tomato). Any other suggestions welcome too - I am already making a veggie tagine with garbanzo beans; dahl; Scottish vegetable/grain soup; cauliflower fritters.... Impish Posted May 4, 2009 Share Posted May 4, 2009 Personally, I've found that a lentil chili with corn bread goes over awesome, as do your basic stir fries...Chinese food is excellent for vegetarian eating. My MIL is vegetarian, and so far every summer crash lands in our city for a month or more, (not with us, thank heavens) so I end up scrambling for several meals. I tend to keep it really simple, because its usually in the hottest weeks of summer that she's here, lol! Huge salads, anything in a crock pot, that sort of thing. (We are vegan for ~2/3 of each year) Essentially, endless vistas of delicious dining await you if you "google" vegan recipes (don't use the quotation marks to make it a phrase). mazakaal Posted May 4, 2009 Share Posted May 4, 2009 How about tortilla soup - broth, canned tomatoes, kidney beans, onion, corn, green pepper, and spices. Top with crushed tortilla chips.
