In what proportions can I add bananas and buttermilk to a cake mix?

I was trying to use up bananas while making pancakes yesterday. My generic muffin recipe tells me to decrease the flour by 1/4 c. and then add 3/4 c. mashed bananas in with the liquids to make the banana variation. So I did the same ratio for the pancakes and they seemed to work.

 

Don't know if you want to try that with a cake - maybe you could find a ready recipe online? But it worked for the pancakes! :)

Here's my veganised banana muffin recipe:

BANANA CHOC CHIP MUFFINS

1 mashed banana

1 ½ cups wholemeal SR flour

1/4 cup sugar

½ cup vegan choc chips

¼ cup oil

¾ cup milk alternative

*1. Mix all the ingredients well and spoon into a well greased muffin tin. Bake for 20mins at 180C.

 

The original recipe called for 3/4 cup of sugar, but I really don't find it necessary and am intending to leave even the 1/4 cup out next time I make them.

Unsinkable, I really hope you didn't take my advice! It was all wrong. (I just made the muffin recipe this morning.) It's the milk that you decrease by 1/4 of a cup, not the flour. Doh!!

I don't know, but I just wanted to mention that you can freeze both.

 

I freeze bananas for smoothies -- peel them and put in freezer bag.

 

If I were you, I would search for banana cake recipes.

 

If you go to www.allrecipes.com, you will see at the top "ingredients."

 

Enter banana and buttermilk.

 

You will get recipes using these items.
