I've got a few ideas, but not even sure if it would work for a co-op class and maybe tie in some writing some how. Any suggestions?? Or other co-op class suggestions that are out of the ordinary. Also, playing the card game Rummy Roots (? is that what it's called? I can't recall right now) would allow them to work on Latin word roots.
