Recipe: Taco Bake

Hey everybody!

 

I got this recipe from my sister but not sure where she got it. It's definitely a "feast" meal but very yummy.

TACO BAKE

 

Doritos (any flavor you like, we like the taco/nacho flavors in our house)

1 1/2 - 2 lbs ground beef

1 pkg or 4 Tbsp of taco seasoning (a pkg is about 4 T.)

garlic and onion powder to taste or you can use fresh if you have it.

8 oz tomato sauce (enchilada sauce works too)

8 oz cream cheese, softened (any fat level will do)

12 oz small curd cottage cheese (a full 16 oz won't hurt anything, again your choice of fat level)

1 lb shredded cheese (whatever your family likes best for tacos)

 

Crush enough Doritos to cover the bottom of the pan.

 

Brown the ground beef with garlic and onion. Drain. Add taco seasoning and tomato sauce. Do not add water. You want it kinda thick. Warm through. This is going in the oven so it doesn't have to be screaming hot.

 

Spread meat mixture on top of Doritos.

 

Mix together the cottage cheese and cream cheese. Spread on top of meat. Top this with the pound of shredded cheese.

 

Make sure your oven is preheated to 350 and bake for about 35-45 minutes or until the cheese is golden and bubbly. Remove and let sit for a few minutes.

 

We like ours topped with sour cream but it isn't necessary.

One thing to note: while I like to experiment with TVP, this is one of those dishes where I just don't think it would taste very good at all. If someone is brave enough to try it, let me know how it turns out.
