They are 7,8, and 12 and have requested we have bakineer science. Any ideas? I would like some sort of engineering spine book so that I can explain everything properly. I've found it does a great job really explaining how all the different ingredients affect the end baking result. It is written to the pastry chef so it dips it's toe into the science of it (enough information to devise your own baking recipes and learn to tweak ingredients to get the results you want) but doesn't do deep deep dives into what's happening on the molecular level or anything. I will also say the recipes in this book are not always the easiest to execute and a lot of the recipes as is makes A LOT, but a lot of the recipes (I have not made them all) will tell you how to adjust to make the amount you want.
