What edibles can I grow inside?

I would tend to grow herbs, because often you only need a pinch of them.

Chives are easy to grow

Rosemary

Oregano

 

Mâche (corn salad) does well in cold frames in winter, but would not do well in a very hot room. And it is small, compact, and expensive.

 

Some vegetables are day-length sensitive, so I would want to consider that.

 

If I had a sunny kitchen window (wish I did!), I'd call a small seed place like Cook's Garden and ask for recommendations. Sometimes one variety of a crop is much better than others for winter/indoor growing.

 

Have you thought of getting a seed sprouter, so you can have fresh cress and other things for winter?
