Freckles Posted July 25, 2014 Share Posted July 25, 2014 I personally would make two one pound loafs and cook it at the same time and temp. I'm always worried that my meatloaf will be under done. I'm not sure, but it sounds like you would want to lower the temp and increase the cooking time so that the inside gets cooked before the outside browns up.
