Quiver0f10
I like eggs scrambled with spinach, onion, peppers and mushrooms, but I would like more variety. What else can I do to get more veggies in the morning?
LucyStoner
Soups. Quiche. Veggie quesadillas. Roasted sweet potatoes, white potatoes or squash with other veggies tossed in. This morning I drank down a large mug of dairy free potato leek carrot soup. I often suck down soup like that in the winter before or after a workout or hike. It is an easy thing because you can just make it ahead and you're golden for the whole week. Heat and go. Also your sautéed spinach and mushrooms pair well with garlic and a little bit of steak. Onions are good too.
Mergath
I love frittatas. And they're so versatile, you can pretty much chop up whatever you have laying around and toss it in.
Laurie4b
I like omelets with avocado or guacamole on them. (I include spinach, onions, garlic) I also put a couple large spoonfuls of canned pumpkin in my oat bran or oatmeal. I add cinnamon and some raisins and that is sweet enough for me, but others might want to add sweetener. A baked potato with cinnamon is another breakfast item I might have.
