whitestavern
I would like to try a few recipes that call for anchovies. It seems that they add a lot of flavor and are high in omega 3. I'll be using them to melt in oil for sauces if that makes a difference. So what do I need to know before I buy? What is a good name brand that I can get at my local chain grocery store? Anything I should avoid or specifically look for? Many thanks for any help!
Rosie_0801
If you are not sure you :001_tt1: :drool5: them, chop them up into small bits.
whitestavern
Does anyone else cook with anchovies?
LaxMom
For things that call for anchovies, I usually just get anchovy paste (Amore). But that's perfect for my use - Caesar dressing, etc. - where they're not meant to be so much seen as a flavoring.
mirth
For anchovy paste (it comes in a tube), I like Crown Prince brand. Many pastes contain preservative -- CP does not. Most anchovies come either rolled or flat in a tin. There is one brand that rolls up the filets in a little glass jar so you can reclose it if you don't use it all. I forgot the glass jar brand.
