lea_lpz Posted July 23, 2013 Share Posted July 23, 2013 I am doing a low glycemic diet and would like to make Spanish rice with brown rice but my past attempts have been pretty unsuccessful. I've increased the liquid and allowed for more cooking time in the past but it still doesn't work. The rice will not absorb the tomato sauce it seems like. Any tips? zoobie Posted July 23, 2013 Share Posted July 23, 2013 Cauliflower "rice" Spanish style is better than brown rice IMO. My picky kid (who doesn't like rice, lol) will eat it! happi duck Posted July 23, 2013 Share Posted July 23, 2013 In my rice cooker I've had good luck mixing brown and white rice by soaking the brown rice for an hour and then proceeding like I was using all white rice. Maybe soaking the brown rice would help in you recipe. I saw the mixed rice on Simply Mint. Google: "house steamed rice ming tsai" for the brown/white mix instructions I've never done this for Spanish rice myself but I hope this is still helpful. TrixieB Posted July 24, 2013 Share Posted July 24, 2013 Laurel's Kitchen cookbook has a Spanish rice recipe that uses brown rice. I've made it a few times and it turned out just fine.
