cjzimmer1 Posted December 1, 2012 Share Posted December 1, 2012 I have no idea what the texture would be like in a greek salad (I'm sure some of it depends on how it was prepared) but I think of barley has a heartier version of brown rice. My moms greek salad was pretty simple - lettuce, olives, onions, feta . . .not much else? i agree barley is kinda like chewy brown rice but slightly rounder in shape. and usually kinda sticky?
