Jane in NC Posted October 16, 2011 Share Posted October 16, 2011 American or Japanese? The former are astringent but when ripe make a good ingredient in cookies or breads. I remember making persimmon pudding (really just a moist cake), persimmon cookies, and persimmon freezer jam. I used to just type "persimmon" into allrecipes and make the highest rated ones.
