food help, please

:bigear: Recently dairy-free here.

 

We've done whole wheat pasta with onion, garlic, tomato, zucchini, and white beans (from a can). I like Goya's "small white beans" or canelli (sp?) beans. The dairy eaters grate Parmesan or asiago on top; the meat eaters add in Italian sausage. Sometimes I do canned diced tomatoes; sometimes diced fresh ones.

Our standbys:

 

 

  • Baked corn tortillas (so they're just getting crispy) with refried beans and Kraft Creamy Italian dressing on them.
  • Fresh rolls with rice paper wrappers, tofu or shrimp, lots of shredded vegies, and rice or rice noodles
  • Pasta with spaghetti sauce
  • Egg sandwiches

Chickpea curry -- use coconut milk.

 

Minestrone soup -- veggies, tomato juice, pasta, beans. (I use some beef broth as well, but you could skip that.)

 

Pasta with lentils.

 

Beans and rice.

 

Black beans used in enchiladas or stuffed peppers, or as refried beans.

 

Rigatoni with tomatoes, white beans, and spinach, and some spices (red pepper, not sure what else is in the recipe).

 

Lots of beans. :)
